Iberian Salchichon is traditional Spanish sausages, it is made with lean pork mixed with bacon. In the preparation process, the lean pork is mixed with the bacon, adding spices: black pepper and salt.
This mixture is left to rest for a day and then wrapped in pork casing. After resting, it is left to cure in a room with optimal conditions for as long as necessary.
The Iberian salchichon es a Spanish sausage that is usually eaten accompanied by a drink (wine or beer); it is not used in the preparation of dishes such as Iberian Chorizo.
