Nose: A complex aroma based on a mixture of ripe black berries, blueberries and raspberries along with delicate clove and pepper spices with cocoa and vanilla nuances.
Palate: Soft and complex mouthfeel flavour with sweet tannins, good concentration and velvety finish.
Description: Castaño Colección is made with a combination of two type of grapes: Monastrell and Cabernet Sauvignon. Both grapes are hand selected on they best ripe moment in order to enhance the final wine.
Food that goes well with this wine: Red meats, lamb, roasts, meat casseroles and small hunting dishes. Cured meats and cheeses.
Technical Information: After the manual selection of the grapes, the best bunches are collected in the winery and then destemmed without pressing in a small destemmer, to then be pumped over by hand in small 6.000 and 8.000-liters stainless steel vats. An average temperature between 24º and 28º C fermentation with the skins during 10 days. The aging process least 10 months in new French oak barrels.
