OUR JAMON - Ham in Malta

Made from 100% pure Iberico pigs, mamellado-lampiño breed, carefully selected by our founderas the best for making 100% Iberico Bellota ham. 

 

The pigs live free roaming in our Dehesa (Acorn woods) in the Sierra de Jabugo, feeding mainly on natural products, specially the acorn, which is their main food during the almost 4 months of “Montanera” (acorn season) that they enjoy, prior to slaughter. 

 

The curing process is totally artisanal and natural, taking place in our drying cellars in the Jabugo area for a period between 24 to 30 months. Constant follow-up of every piece helps to guarantee their quality and consistency.

 

With the same origin and curing process as our ham, their smaller size allows for a shorter drying period, and makes it ideal for eating at home. Our shoulder ham has a more intense aroma and texture than our 100% Iberico Bellota Ham due to the higher proportion of intra and intermuscular fat. Thanks to its excellent quality-price relationship and its smaller size, better adapted to smaller family units, is one of our most demanded products.
