Made from Verdejo grapes. The average age of the vines is 25 years. After harvesting the grapes are transported to the winery. Fermentation lasts 3 months. It is carried out in stainless steel tanks with the addition of yeast. Throughout the fermentation stage, the wort is mixed regularly. Winemakers also monitor temperature indicators, which should not exceed 15 ° C. After 21 days, the wort is subjected to cold maceration at 6 ° C for 12 hours.
