The grapes come from 70-year-old vineyards planted in clay-calcareous soils. The harvest is carried out manually during the optimal ripening process. The grape varieties are fermented separately in steel tanks, always with the grape's own yeasts and with a spontaneous malolactic fermentation, the whole process is at a controlled temperature of 25 ºC. Aged for three and a half years in Bordeaux French oak barrels, half new and half used. The wine stays in the bottle rack for a long time.
