Colour: Bright cherry pink colour and beautiful effervescence due to multiple and tiny bubbles.
Nose: a delicate and intense aroma is sniffed, with clear notes of cherries and strawberries, wrapped by hints of honey, toast and floral scent. It is an unusual smell in which freshness dominates over vinosity.
Palate: The flavour is exuberant and the effervescent mousse that is released due to the multiple and tiny bubbles provide an intense a creamy sensation that caresses inside the mouth very gently, enhancing all of its rich aromas.
Description: To obtain this tasty wine, a winemaking process is followed. The grapes are picked by hand and the flower must is gently squeezed and subjected to a light maceration to obtain a delicate extraction of colour and the first aromas.
The first fermentation is at a controlled temperature in stainless steel tanks and the second is in a bottle with rectified concentrated must and selected yeasts.
Food that goes well with this wine: Pasta, cured meats, Japanese food and baked goods.
Technical Information: Made with Pinot Noir grown in plots with loam-clay-limestone soil at an altitude of between 100-250 m above sea level. The vineyards are on average 10 years old and the minimum aging is 12 months on their lees.
