Bodegas Mauro entered the Toro designation of origin with Bodega San Román, at the end of the 1990s.

The winery currently has 140 hectares of organic vineyards, in the process of being converted to biodynamic viticulture with the aim of increasing organic matter and promoting biodiversity in the soil
